Does anyone have a link to where, or a quote of how, Palin didn't know the countries in NAFTA and thought that Africa was one country?

That is going to be hard to come by since it seems these new things are all alleged leaks from McCain staffers.
Are there links to the leaks then?
This is the first place of heard of it. Its hard to believe.
I suspect its another mis-quote and/or taken out of context... a spin.
There is a possibility that they are trying to assign blame elsewhere but this seems like an odd way to go about it so I would give some credence to this. (it isn't inconsistent with what I've seen of her)
What happened to:

The opposite: if it is important that it be true you'd better check that it is doubly.
It seems, otherwise, that people double check the things that they do not want to be true (Biden's quote) and just accept as true the things they do want to be (Palin's quote).

Thanks for digging those up.
Without the quotes in proper context, its hard to decide whether or not I believe that she siad those things. From these, we can't really know just how stupid she is.
While we're on the subjects of gaffes though, this is from the bottom of your first link:

I don't even really have a problem with people making gaffes. We all say stupid shit from time to time.
And without any context, pointing them out seems fruitless to me (although I can see that others are capable of just believing whatever they read so I see why people do point out the gaffes). For example, if Biden was focusing on calming fears and mis-said "TV" instead of "radio" then its hardly a gaffe at all. On the other hand, if he was focusing on the effects of TV and then said that FDR used TV, then that is pretty stupid, and a false claim on top of it.
But to read that someone said this or that stupid thing is wholly worthless without context, IMHO.
The way people spin quotes is shameful. And so is the way people jump on them and spread the spin around.

Agreed. And it seemed to have been what the McCain campaign mostly consisted of,...
Meh, I didn't see much of it. Although, admittedly, I stay away from the news.

I'm sick of hearing that McCain lost rather than hearing that Obama won. It seems Obama really wasn't a good candidate, its just that his opposition was so bad
