I think that's largely a myth. Unless you're going to write your own apps somebody else is going to be defining the terms of your interaction with the device, regardless. Even the Android and Cydia stores are walled gardens.
Cydia is as useless as you say, and I suppose it is true that a minority of users care about writing their own programs. But I value the ability to make an app or two of my own and I don't want to buy a Mac in order to do that. My ipod is jailbroken, and I can and do write the occasional app. I don't own an ipad right now, but I wouldn't even consider buying a tablet device that I couldn't program.
Well, Android also wants to be the be all and end all of the tablet.
Yes, but Google seeks to accomplish that by providing an OS that runs on every manufacturer's hardware.
