I don't think it does. I think "the twelve" was used to refer to the apostles as a group and not necessarily the number in the group by the time Paul was writing. Notice the verse says that he appeared to Peter and then to the twelve (1 Corinthians 15:5). Changing it to read 11 didn't really make it more correct since he had already been seen by Peter. They should have changed it to 10.
IMO, this discrepancy doesn't really impact the basic tenets of Christianity.

How about the empty tomb thing altogether? If (when) it was only in 325AD that a woman recognized the tomb and its location - before that the entire resurrection issue had not been as clear-cut as it is understood to be today.

How about the empty tomb thing altogether? If (when) it was only in 325AD that a woman recognized the tomb and its location - before that the entire resurrection issue had not been as clear-cut as it is understood to be today.
Again, that is more of an historical matter than a textual one.
Some textual questions related to the empty tomb might be: What happened when the tomb was discovered? Was the stone rolled away when the women got there or as they showed up? Did they tell the disciples or run away in fear? Was there anyone involved in the initial discovery of the empty tomb who wasn't also responsible for burying Jesus in the first place? ... And so on.
These are questions we can answer by examining the texts and their peculiarities and similarities. Your question is admittedly interesting and important, but ultimately it isn't a textual one.
