The words in both GEnesis 1 and Genesis 2 , although translated differently, basically mean 'formed'. That includes man, and also the heavens and the earth. In Genesis 1, God looked over the water(chaos), and seperated it into order (heavens and earth). It wasn't until more modern times that the concept of 'God creating the universe' came about.
This was not the ancient Hebrews concept though.

Why would would the KJV bible be relavent at all?? I would think the original hebrew is much more relavent, as well as the beliefs about cosmology, and the culture of the time it was written down.

Well, then could you explain the inconsitancies that were specifically mentioned, such as the order of creation, which days the specific creatures were created on , etc etc etc.
Just declaring there are no inconsistancies is really not valid when there are specific points that people have shown to be inconsistant.
Unless, of course, you just want to go into denial.

One thing I will point out that that the Zohar, while attribued to a 1st century Rabbi, was actually written in the 12th century.

Yes,
Why shouldn't something be looked at in the historical and cultural context in the time it was written (as well as the original language).
Why must it be reinterpreted by people who came 700 years later?

I will have to say that the Jewish interpretation of Genesis and the Christain one are very much different. Of course, the Jewish initial
assumptions are so much different you would conclude it is a different religion.
