I switched to a low carb diet a few weeks ago, but didn't pay any attention until I went looking for another notch on my belt to tighten things up--and there were no more notches.
Went to the scales and found I had lost maybe 12 lbs. painlessly by eating bacon, sausages, pork ribs, fatty steaks and omelets (as well as lots of salads with bacon bits and blue cheese), while avoiding sugar, donuts, pasta, bread and the like.
Hmmmmm. Sounds real good so far.

Low carbs vs. hi fats
Faith--it is rare that I agree with you, but in this case--I do.
But to take things a step further, it is not so much a low-carb diet that seems to work best, but a hi-fat diet.
For me, a couple of nice Italian sausages and maybe three strips of fatty bacon in the morning carries me all day, and for dinner (with some red wine) either a salad with blue cheese or even just a bit of salami and cheese works well. I don't get as hungry as I used to, and there are no snacks in between.
From what I read, it is the fat that satisfies the appetite.
In any case, it is working so far. I'm going to have to buy a new belt (smaller) and will be able to start wearing jeans that I had long since outgrown.
All this while eating the foods I really like!

The fast food industry didn't change their menu to better conform to USDA guidelines.
Many of them did change their menus to conform to what they thought customers wanted.
McDonalds and others didn't just add salads to their menus on a whim!

My own personal ad hoc rule: if it tastes good, it's fattening.
I'm eating breakfast now--nothing but bacon.
Tastes good, and holds me all day. I've lost over 20 lbs this way.

Bacon! You forgot bacon!
I do four strips of bacon for breakfast many days--and nothing else. I don't need lunch after that as the brain thinks its no longer hungry. Other days may be sausage.
And I cut out bread, pasta, sugar, processed foods and most other related carbs.
Once a week I go out for breakfast and have a nice bacon, mushroom, and cheddar cheese omelet with country potatoes, and that's about the main carb load for the whole week.
Result--lost 25 lbs in one year, from 190 to 165. And feeling fine.
And I resumed sabre fencing after a 35 year break.

I have bread, usually in a hamburger or garlic bread with a steak, maybe once a month.
If you are doing the basic "bacon diet" with lots of fats, the occasional hamburger bun or whatever is no big deal.
I think the trick is getting off of the sugar/insulin cycle where you have the ups and downs, with each down causing you to want more of some kind of sugar to get back up.
But everyone is different, so you have to see what works for you.
Me, I like bacon!

Maybe try a big salad instead of the pasta? Load it up with blue cheese as that adds fat content, and it seems that a lot of fat tells the brain it is satisfied.
Or maybe a cobb salad, with chicken, cheese, bacon, tomato, and all the rest. Make it big enough and you shouldn't be hungry!

On diets
Here's a thing to try, which worked for me:
Do either bacon or sausages for breakfast. No toast, no muffins, no sugar in the beverage--just four or five slices of a good thick bacon or maybe eight sausages.
Then, no snacks, no lunch, no nothing until dinner.
Dinner--either a nice fatty steak wrapped in mushrooms or onions or some such, or a huge salad smothered in blue cheese dressing. And of course your favorite adult beverage.
Give that a try for two weeks and see what you get. No guarantees, as we're all different, but that general regime about five or six days a week dropped me from 190 lbs to under 165, and still dropping slowly.
(The other day or two it is out for breakfast, with a big omelet including cheese, mushrooms, and bacon, along with country potatoes. Yum!)

RAZD and Faith--
I'm still doing well with the modified "paleo" diet.
I avoid sugars and processed foods as much as possible, also bread, pasta and anything that converts to sugars, such as potatoes. But I go out at least twice a week for a fine breakfast of a mushroom, cheese and bacon omelet and country potatoes.
Several other days a week, breakfast is tea (nothing added) and either bacon or sausage, then no lunch. The fat seems to fool the brain into not being so hungry. But then I'm out of the house most days, so food isn't so near to hand and that is an advantage.
Even sillier--after a break of several decades I've started fencing again, which I did for quite a while as a wee lad. The legs are ready to sue me for abuse! But the exercise is good and I can still show the youngsters a few tricks!
Anyway, cutting the carbs and adding good fat (rib eye!) seems to work for me. YMMV
