It is not fats you have to avoid but the carbs, and bread is all carbs. Make it into a lettuce wrap.
Lettuce is a good wrap. But other leafy vegetables make a sometimes surprisingly good wrap. One example: Those big, fresh collard leaves are really good wraps. I had to work hard to get my wife to try them. She could not believe uncooked collard leaves would be any good, but she was pleasantly surprised.
Maybe a little variety will help you leave those loaves on the store shelf.

I took the time to read these articles, and I don't see any ringing endorsement for what you are proposing. What do you find encouraging in those articles?
You may have had some good arguments on the religious stuff, but you have not done your homework on this topic. Note the quote from the second article:

Are you really being given the kind of advice that is the subject of this article? Are you having low blood sugar episodes?
