Once there
was only single celled life on earth. From there it evolved to what it is now. There is no reason to assume that, if it ever comes to pass that only single celled life remains, evolution will grind to a halt, unless by 'eventually' you mean "just before our sun goes nova." But that would be cheating because that would stop evolution in any stage.
