It sounds like you ran into a variant of an issue with the beta of IE and XP: Depending upon how you installed various things, you won't be able to go back.
What is currently known, and Microsoft has warned against, is that if you installed Beta 1 of IE on XP, then upgraded to Service Pack 3 of XP, and then installed Beta 2 on top of Beta 1, in that order, then you won't be able to uninstall. Instead, you'll need to uninstall SP3, uninstall B1, reinstall SP3, and then install B2 if you want to be able to uninstall B2. You may be witnessing something similar.
But, that's to be expected in a beta. It isn't finished.
