...in the case of evolution theory, things are not so simple since the general public is not familiar with the empirical or mathematical knowledge... What in the name of god makes you think that the public's level of understanding has anything to do with the truth or falsity of a theory?
...it ignores the fact of insufficient variations... How do you know that?

What keeps them from seeing the obvious? Well, as a shipwright on a boating forum told me when I called him out on some bullshit he was peddling about fluoride, they have been "blinded by their education". Direct quote, BTW.

...telling people that you have mathematical proof of something that is a factual reality points to your sums being wrong, not reality being wrong. It seems to be a common characteristic of creationists that they cannot grasp the difference between reality and the symbols that we use to imperfectly describe it.

I don't think there is a conspiracy, I think there is a habit of thought that is reinforced from many angles. Angles like....knowledge and training? You really should consider the unintended light your comments throw on the design of your learning resistant mental firewall.

Mathematics is a language that describes reality. As a descriptor, or as a predictor, of reality, it is useful only to the degree that the symbols accurately map that reality. When a model is presented that contradicts a large number of consilient physical observations, it will be approached with a high degree of skepticism. Typically, individuals who have a high degree of confidence in their model, and an appropriate level of technical knowledge to defend it, do not end up in the hinterlands of the internet. Crank scientists, on the other hand, often do.
