As has been pointed out, you seem somewhat selective when it comes to Bible versions.
As can be seen from
Blue Letter Bible - Versions,
"for in the day that you eat from it you will surely die" is found in the NKJV, NASB, RSV, Webster's, Young's Darby's, ASV, and HNV. It is also found in the JPS and Kaplan Torah.
Furthermore, the Targum Onkelos asserts
"for in the day that thou eatest of it dying thou shalt die".
At least, if one is to believe Lewis Carroll, Humpty-Dumpty paid words extra to mean what he wanted them to mean. You seem to be getting off cheap.
