Ever tried Cabrales blue cheese?
Once, in a spanish restaurant in Miami, on top of an aged ribeye...one of the best steaks I've had - the bleu on it was a great pairing.
I'm a huge cheese guy, especially blue (bleu) cheese/gorgonzola.
One of my dad's neighbors makes his own manchego, that is some of the best cheese I've ever had, especially paired up with a Rioja from Spain.
Wonder how Luca's doing?
