What you post isn't the story of Josephus finding a giant's skeleton, it Josephus' retelling of a story he read about. This makes it second hand, which is less than optimal.
But lets look at the contents of the story.
1) The Rabbi is saving face by diverting the credit for the victory to God and away from the Romans.
2) We have excavated countless cities and grave in the mid-east and there are no giants. Why do you think they could have eluded us?
