Nope. A caterpillar metamorphosizes into a butterfly. They do not "evolve" into butterflies.
Similiarly, tadpoles do not evolve into frogs and eggs do not evolve into chickens.

In other words, it happens during the life time of the particular thing you are looking at.
A single animal does not evolve. Evolution takes place over generations.

Actually - nope. He didn't. I'm guessing you got that information from the same place you got that he "converted".
But, for arguments sake, let's say he did.
If I said - "Grass is green", then just before I died I said "I made it all up, grass isn't green." Does that mean grass is no longer green?

As for this "book I once read". You are new to the forums so I'll cut you some slack. Here's how it goes:
If you wanna say "there was a scientist who said this or that" go ahead and google it. If you can find a reference, post it.
Chances are pretty good that its gonna be from a refuted creo site.
If you start putting up unsupported quotes, you have to be completely willing to accept equally unsupported quotes. then the whole thread basically comes down to the last 10 or so posts of this thread.
"I heard about this scientist who said this"
"I heard the pope said this"
"I don't believe you."
"I don't believe you either".
We can both make up great crazy quotes, but neither of us will score any points with them.
