In the equation above, energy (E) is equal to matter (M) times the square of a constant (C). Einstein suggested that energy and matter are interchangeable.
No this is incorrect.The equation means energy is equal to mass times the square of the speed of light.They are not interchangeable they are different aspects of the same thing.
Mass is a property of matter and is a numerical measure of the inertia of a body which is defined as its resistance to a change in that body's state of motion.

yes, but the law also states that "enery cannot be created or destroyed, only changed from one form into another. But then how does energy exist if it cannot be created.
What this means is that the total energy content of the universe does not change.When we make measurements of the state of a phenomena as it undergoes change and take into account all the changes there is a numerical quantity that remains the same which we call energy.Now just what energy is no one knows but this numerical quantity that we measure remains constant and therefore conserved.
The existence of energy is not in question since we can measure it but the forces of nature {electromagnetism,strong force,weak force.and gravity} are the forms by which energy manifests itself in all these different ways that we observed.{heat energy,chemical energy, potential energy,nuclear energy, radioactive decay energy,fusion energy etc.}
