Using his logic, "Yes, but there exists examples that shows that not all of them can. Hence we know Theism exists."
The flaw of his logic is of course the two premises:
- We can never be 100% sure of someone's faith based upon their actions and words.
- We can always be 100% sure of someone's faith based upon them performing the action of martyrdom.

Close, but no cigar.
Skeptics usually accept quite quickly if someone says "I'm a Christian.". In fact, sometimes they (maybe I should say we) overreact, and read too much into that.
Skeptics are however much more skeptical towards factual claims. You can believe whatever the heck you want as long as you keep it in your head, basically. But it's useless to try to dictate to others what they believe.
